The Origins of Avil Milk

In the past, in Malabar, avil (flattened rice) was a popular evening snack enjoyed with tea. It was traditionally made with avil, grated coconut, jaggery, and sometimes small slices of onion, and was known as "Avilum Thengayum" or "Avil Kuzhachathu". Another variation, made with banana, dry fruits, and small onion slices (added only in some areas) mixed with water, was called "Avilum Vellam".

Avil played an important role in local celebrations of that time. In many parts of Malabar, it was customary to serve avil with water when a new well was dug. Avil mixtures were also offered as prasadam in many temples, reminding us of the old glory days of avil in Kerala.

Later, Avilum Vellam was modified by adding milk and additional dry fruits — giving birth to the beloved drink we now know as Avil Milk. For Avil Milk, the flattened rice (avil) is specially fried to enhance its texture and flavor. This special preparation adds a unique aroma and crunch, giving the drink its signature taste that sets it apart from any other.
